Description

Apicoltura Cazzola Raspberry Jam is a simple Italian extra jam made with raspberries, grape sugar and lemon juice. That’s it. No added pectin, no preservatives, and no long ingredient list to squint at over breakfast. 

It comes from Apicoltura Cazzola in Altedo, near Bologna, a small agricultural producer better known for honey and fruit preserves. Their jams are made with at least 100% fruit in the recipe, then slow-cooked in the artisan way. The raspberry flavour is bright and tangy, with enough sweetness to sit nicely on toast without losing the sharp little edge that makes raspberries so good.

Meet the maker: Apicoltura Cazzola

Apicoltura Cazzola is a nomadic beekeeping producer in the Bologna area of Emilia-Romagna. The beekeepers move their 300+ hives with the seasons and the flowering. It is a very direct way of following the landscape. When the flowers change, the honey changes too. Meanwhile, the honey is left as natural as possible - it isn't heat treated for example. Apicoltura's mantra is simple, and rather lovely: “Why change what nature has already made perfectly.”
