Description

Apicoltura Cazzola Forest Fruits Jam is a fruit-forward Italian preserve from a producer in Malalbergo, near Bologna. It is made without sucrose or pectin, using fruit sugars, lemon juice, and low-temperature vacuum cooking. That means the texture comes from evaporation, not added setting agents, and the fruit keeps more of its colour and fresh woodland berry character.

  • Made without sucrose or added pectin
  • Low-temperature cooking preserves fruit flavour
  • Sweetened with fruit sugars, not cane sugar
  • From Apicoltura Cazzola in Bologna

This is the jar I’d open for thick toast, ricotta, yoghurt, or a simple crostata. Forest fruits give you that lovely mix of berry sweetness and a little sharpness, so it does not feel flat or sugary. Spoon it over pancakes, fold it through porridge, or put it on the table with soft cheese and good bread.

Meet the maker: Apicoltura Cazzola

Apicoltura Cazzola is a nomadic beekeeping producer in the Bologna area of Emilia-Romagna. The beekeepers move their 300+ hives with the seasons and the flowering. It is a very direct way of following the landscape. When the flowers change, the honey changes too. Meanwhile, the honey is left as natural as possible - it isn't heat treated for example. Apicoltura's mantra is simple, and rather lovely: “Why change what nature has already made perfectly.”
