Description

Apicoltura Cazzola Fig Jam is a fruit-rich Italian fig preserve made with figs, grape sugar and lemon juice. No cane sugar. No refined sucrose. No added pectin. The set comes from slow evaporation, using low-temperature vacuum cooking to help keep the fruit’s colour and flavour intact. 

It has that soft, seedy fig texture that makes toast feel like breakfast rather than just something grabbed while standing up. I’d put it with buttered sourdough, a wedge of aged cheese, or a spoonful of thick yoghurt. It also works well on a simple crostata, where the fig can do most of the talking.

Meet the maker: Apicoltura Cazzola

Apicoltura Cazzola is a nomadic beekeeping producer in the Bologna area of Emilia-Romagna. The beekeepers move their 300+ hives with the seasons and the flowering. It is a very direct way of following the landscape. When the flowers change, the honey changes too. Meanwhile, the honey is left as natural as possible - it isn't heat treated for example. Apicoltura's mantra is simple, and rather lovely: “Why change what nature has already made perfectly.”
