Description

Apicoltura Cazzola Chestnut Honey is a dark, bold Italian honey made from chestnut blossom. It is not the soft, floral honey you put in tea without thinking. This has more edge. Expect deep amber colour, a runny texture, and a lingering bitter note that makes it brilliant with savoury food.

It comes from Apicoltura Cazzola, a family farm in Malalbergo, near Bologna, with more than 300 hives. They practise seasonal hive movement, following different blooms through the year. Their honey is raw and unheated, keeping the character of the blossom as close as possible to what the bees made.

  • Raw Italian chestnut blossom honey
  • Dark amber, aromatic, slightly bitter
  • Slow to crystallise, naturally runny
  • Made near Bologna by Apicoltura Cazzola
  • Excellent with aged cheeses

Try it with Parmigiano Reggiano, blue cheese, roasted pork, or a slice of toasted sourdough with salted butter. It is also very good drizzled over ricotta, where the bitterness keeps everything from becoming too sweet.

Meet the maker: Apicoltura Cazzola

Apicoltura Cazzola is a nomadic beekeeping producer in the Bologna area of Emilia-Romagna. The beekeepers move their 300+ hives with the seasons and the flowering. It is a very direct way of following the landscape. When the flowers change, the honey changes too. Meanwhile, the honey is left as natural as possible - it isn't heat treated for example. Apicoltura's mantra is simple, and rather lovely: “Why change what nature has already made perfectly.”

The range is wide; explore the different flavours of acacia, citrus, chestnut, cherry, dandelion or linden honey for example.

We love this range, because there is real pleasure in having a few different honeys open at home. One for toast. One for cheese. One for yoghurt. One that ends up being tasted from the spoon, or stirred into a hot drink.
