Apicoltura Cazzola Acacia Honey with Truffle is one of those jars that makes sense the moment you open it. The honey is pale amber and silky, with tiny truffle shavings suspended through it. You get the gentle sweetness of Italian acacia honey first, then the earthy truffle comes through and changes the whole mouthful.

Use it where sweet and savoury meet. Spoon a little over aged cheese, pecorino, ricotta, roasted squash, or warm bread with butter. It is also lovely beside cured meats, where the truffle pulls the honey away from being just sweet.

Meet the maker: Apicoltura Cazzola

Apicoltura Cazzola is a nomadic beekeeping producer in the Bologna area of Emilia-Romagna. The beekeepers move their 300+ hives with the seasons and the flowering. It is a very direct way of following the landscape. When the flowers change, the honey changes too. Meanwhile, the honey is left as natural as possible - it isn't heat treated for example. Apicoltura's mantra is simple, and rather lovely: “Why change what nature has already made perfectly.”

The range is wide; explore the different flavours of acacia, citrus, chestnut, cherry, dandelion or linden honey for example.

We love this range, because there is real pleasure in having a few different honeys open at home. One for toast. One for cheese. One for yoghurt. One that ends up being tasted from the spoon, or stirred into a hot drink.
