The dry bristles also mean that a patisserie brush is great for applying edible gold and edible silver to chocolates and patisserie. 

This 20cm, beech-handled patisserie brush is a hardwearing and elegant kitchen staple. A medium patisserie brush and large patisserie brush are also available.
