The red velvet spray is made from cocoa butter so it not only looks spectacular, but also creates a very fine impermeable outer layer to help keep patisserie moist. White velvet spray, chocolate velvet spray and caramel velvet spray are also available.
Immerse the can in warm water for 30 minutes before use; and place the dessert into the freezer at least 20 minutes before spraying.
