Pastificio Del Colle’s rainbow striped sombreroni are shaped like little Mexican hats, hence their name! Sombreroni are the perfect shape for stuffing (thanks to the round little bottom) and collect sauce brilliantly in the ‘hat’ rims - fill with creamy ricotta and spinach, seal up, bake in a rich tomato sauce then tuck in!
The distinctive bright stripes are created using natural dyes from ingredients such as spinach and beetroot. Serve the pasta for a quick, but dramatic dinner – or give a stylish bag to anyone who loves unusual Italian ingredients.
Pastificio Del Colle is based in sunny Puglia, and has been making pasta for 100 years. In recent years, Pastaficio Del Colle has become known for its beautiful coloured pasta shapes, which are all made using natural dyes. The company uses traditional artisan methods – shaping their pasta with bronze dies, selecting the best durum wheat semolina, and allowing the pasta to dry slowly. The company was started by Vito Nettis in 1920, and is now run by his nephew who is also called Vito Nettis!
