Italian food is famous for the diversity of regional cooking, though you'll find that some Italian ingredients are famous nationwide: balsamic vinegar, risotto rice, 00 flour. Yet many fabulous specialties are less well known. Try mostarda, whole fruits preserved in mustard syrup. Enjoy fennel pollen from the dried flowers of wild fennel, used to garnish fish, chicken, chocolates or pasta. Or try ‘Nduja, the spicy Calabrian sausage, served on crackers or in a pasta sauce. You can also try Guanciale, perfect for use in the Roman pasta dish, carbonara.
