This dark chocolate couverture is made from Costa Rican hybrid Trinitario cocoa. In the north of the country, a chocolate-production revival has occurred. Thanks to the work of Juan Pablo, once abandoned cocoa farms are now flourishing. He has provided financial support and farm management training to over 400 farming families to bring the cocoa farms back to life. Theri new knowledge has enabled them to convert a passion for protecting their heritage into a thriving enterprise.
