Plus, unlike using fruit puree or fresh yuzu - the couverture pieces give sponges or glazes the same intense fruit flavour without introducing more water to the recipe, and compromising the texture.

Valrhona have combined yuzu juice with cocoa butter, making it possible to use this yuzu couverture like you would chocolate, in anything from truffles to homemade Easter eggs. These yuzu drops are fantastic paired with tropical fruits, citrus fruits as well as richer flavours of coffee and dark rum.
