Use sesame tofu powder to make a nuttier alternative to soybean tofu at home. Sesame ‘tofu’ – or goma dofu – is made using ground roasted sesame seeds and kuzu root. The finished ‘tofu’ is silky smooth with a distinct sesame flavour. For a simple starter, serve chilled cubes of the sesame tofu with soy sauce and a small amount of wasabi. Try using the sesame tofu wherever you would use soy tofu, and see how it gives a different character to your favourite dishes.

To make the sesame tofu, mix the powder with water in a ratio of 1:4. This packet is 100g, so use 400ml water. Whisk together in a saucepan until there are no more lumps. Bring the pan to a high heat, stirring with a wooden spoon all the while. You should feel the mixture thicken as you stir. When the mixture turns opaque and comes off the spoon in thick dollops, lower the heat. Continue stirring to cool the mixture a little.

Then pour the mixture into a mould that’s lined with cling film – a square container or loaf tin is ideal. Tap the mould sharply a few times to get rid of any air bubbles, then allow to cool to room temperature. When cool, refrigerate for approximately two hours or until set. The sesame tofu will keep in the fridge for around two days.
