Terre Exotique’s agar agar powder is a versatile gelling agent and vegetarian alternative to gelatin. The white powder has no smell or taste - use it to set cheesecakes, panna cottas and custard tarts, without altering the finished flavour of the bake.

Obtained from red algae, this gelling agent is collected from the beaches of Pen Lan, washed and dried, boiled, then ground down to a fine powder. You only need 2g of this natural powder to replace a leaf of gelatin - first dilute it in a liquid solution until the agar agar has dissolved, then add to jellies, gels and liquid sauces that need setting. You can also add agar agar to fruit juice to create a thicker purée.
