Terre Exotique’s ras el hanout spice mix is a traditional Morrocan blend for tagines and stews. This North African spice blend can often include up to 30 ingredients, but here, the focus is on the essential spices of cumin, cubeb pepper, ginger, nutmeg and turmeric.
Spicy, hot, sweet and sour, the blend of flavours enhances Morrocan classics of rich meat stews and fragrant tagines, however it works just as well on Western dishes. Try sprinkling over polenta chips, grilled halloumi and use as a dry rub for roast chicken.
Ras el hanout translates as ‘head of the store’, as traditionally, only someone highly qualified could create the complex blend.

The company was founded by Erwann de Kerros, a Breton and seasoned traveller. After tasting pepper in the Penja plantation in Cameroon, Kerros yearned to try other specialist peppers and spices – and Terre Exotique was born.
The company works closely with farmers to preserve natural habitats, and to ensure a sustainable income for local communities. Each spice is carefully packed in tins or glass jars – with no plastic. The metal tins preserve the flavours and aroma of your spice, by protecting them from sunlight. So the ingredients stay at their best for longer.
