Dried cornflowers are a beautiful, edible flower known for their cobalt-blue petals. They make a stunning, and unusual garnish thanks to their delicate, clove-like flavour. Place a pinch of cornflowers on top of a piece of white fish for a great finishing-touch, or try using a few of the cornflower petals to decorate canapés, cakes, a cheeseboard, or a couscous salad.
The cobalt-blue cornflower petals also give off colour and aromas when infused in liquids. Try adding a pinch of cornflowers to a sugar syrup, and use for Italian meringues, marshmallows or cocktails. Or mix the cornflower with a little hot water, and then add icing sugar for a naturally-coloured, and delicately-flavoured frosting.
