Swedish Waffles with Whipped Cream and Cloudberry Jam

This waffle mixture makes delicious crispy, heart-shaped waffles when made in Skeppshult's cast iron waffle iron. You won’t have tried anything like them before, they’re beautifully crisp with a thin profile with a light aerated centre. Perfect served with whipped cream and cloudberry jam for an authentic Swedish waffle. If you prefer savoury flavours, they’re also great with a cold water prawn salad made with crème fraiche, lemon, red onion and dill.

To ensure perfect waffles every time, please make sure the iron is oiled in all the crevices with a pastry brush and cook slowly on a medium to low heat so the waffle cooks all the way through.


Ingredients for the batter

  • 100g Butter (melted)
  • 240g Plain Flour
  • 1/2 tsp Salt
  • 1 tsp Baking Powder
  • 500ml Whole Milk
  • 2 Eggs
  • Sunflower or rapeseed oil 

How to make the batter

  1. Mix the dry ingredients in a mixing bowl
  2. Gradually whisk in the milk. Then add eggs and the melted butter and whisk until the batter is smooth
  3. Let the batter sit for 30 minutes

How to make the waffles

  1. Heat up the waffle iron on a low to medium heat to make sure it's hot before cooking
  2. Use a pastry brush to brush oil on to both sides of the waffle iron 
  3. Pour in enough batter so it doesn't quite reach the edges of the heart, as the batter will get pushed through the sides when you close it
  4. Cook for roughly 3 minutes before turning the waffle iron over. Then repeat on the other side, making sure not to open the waffle iron before the waffle is fully cooked
  5. Slowly open the waffle iron to check the waffle is cooked. If it is sticking leave for a little longer so the batter cooks in the middle
  6. Once cooked, remove your waffle from the iron. You can use a fork to gently prize the waffle away from if needed
  7. Repeat steps 2-7 to make more waffles. Adjusting the heat and timings as necessary
  8. Eat as soon as they are done for the crispiest waffles
