With Pump Street Bakery Ecuador 60% dark milk chocolate couverture, you’ll certainly be able to taste the difference. The cocoa beans used to make this couverture come from a single estate in Ecuador – the Hacienda Limon – and the chocolate is somewhere between dark and milk. It has the characteristic bitter-sweetness of dark chocolate, but mellowed out with the addition of milk – resulting in luxurious creations that will keep everyone coming back for more!

Couverture is favoured by professionals for its rich, smooth mouth feel and glossy results – both due to the high cocoa butter content.

The couverture callets are pre-tempered, so it’s ready to use straight away. If you want to keep the shine and ‘snap’ of tempered chocolate for decorations or homemade chocolates, try to keep the temperature below 31°C when melting. For best results, heat slowly over a bain-marie and stir regularly until all the chocolate has melted.

They are now a bean-to-bar producer of high quality, single origin chocolate bars and couvertures. Pump Street Bakery know how important the growing, drying and fermentation of cocoa beans is when it comes to good quality chocolate. This led them to only work with owner-operated farms and co-operatives that use traditional methods wherever possible, and that also grow the best varieties of cacao. The beans are then directly imported to their bakery, where they roast the cocoa beans in their bread ovens to kick off the chocolate making process.
