Black glutinous rice is a short grained rice famous for its sticky texture and dark colour. Once cooked, it can be easily formed into rice balls and cakes. It is popular across South East Asia where it is also called forbidden or purple rice.
In Malaysia, black glutinous rice is used to make pulut hitam, a sweet rice pudding flavoured with palm sugar, coconut milk and pandan leaves. It can also be used in savoury dishes. Serve it topped with soy-garlic chicken or grilled oyster mushrooms.
