Description
Medium couscous is a staple ingredient of Middle Eastern and African cuisine. Made from durum wheat semolina, this light and fluffy grain is frequently served with curries and fragrant stews. It is a convenient pantry staple, since it only requires soaking in boiling water to cook.
Couscous brilliantly absorbs flavour so is a great addition to many dishes. Cook in a chicken broth, stir through cumin and coriander or create a harissa broth for an extra burst of flavour when preparing it. It also works wonderfully in summer Middle Eastern salads, or serve with a rich Lamb tagine.
