The De Buyer Elastomoule canelé bordelais mould is ideal for making bite-size versions of this traditional French pastry. You can also make tiny canelé-shaped fruit jellies.
De Buyer Elastomoule moulds are made from high quality silicone foam with metal powder. This means you get the same great golden-browning results as metal bakeware, but with the added non-stick benefits of silicone. The perforations in the mould are De Buyer’s patented R’System - they allow hot air to circulate to ensure perfectly even cooking. The silicone mould supports temperatures from -70°C to +300°C, so you can use it in the oven, in a bain marie, or in the freezer.
The De Buyer Elastomoule canelé borderlais mould includes a recipe card created by MOF (Meilleur Ouvrier de France) chefs and World Pastry Champions.
For best results, use the canelé mould on a perforated baking tray. The mould makes 20 canelés that are each 3.3cm high and 2.4cm in diameter.
Wash & grease before first use. Hand washing recommended. Not suitable for microwave or grill use. Do not use with sharp objects. Do not heat while empty.
