Indonesia has its own range of spicy 'sambal', which just means 'sauce', and Thai sriracha hot sauce is available on many restaurant tables. In Western China, chilli oil is the backbone of the cuisine, with its cold, mouth-numbing heat.
Sriracha and chilli sauce are two condiments that are often found together, in dishes such as chicken wings and pho but have totally different purposes in the kitchen. They both have capsaicin in them, which adds heat and flavour to meals, but one adds spice while the other adds spice and sweetness!
What is Sriracha?
Sriracha is a condiment made from hot red chilli peppers, garlic, salt, sugar, and vinegar. It is named after the coastal city of Si Racha in Thailand where it was first produced for dishes served at local seafood restaurants. It has a hot-sweet-sour flavour.
What are the different types of chilli sauces?
Chilli sauce comes in a variety of flavours:
- Tabasco is a type of hot pepper sauce, made from tabasco peppers. The most popular variety is the Tabasco Green Jalapeño Pepper Sauce, which has a tangy, spicy flavour with just the right amount of heat.
- Cholula has a smokier heat
- Habanero Sauce is another type of chilli sauce, but this one packs more heat than flavour.
- Sweet chilli sauce in contrast is very mild. It offers a gentle warmth but is mainly sweet in flavour
Lots of chilli sauces are blended with other flavours, such as garlic, lime, black pepper and chipotle seasoning.
How should you use chilli sauces?
Sriracha and nearly all chilli sauces can be used as a condiment or cooking ingredient. Sriracha has been around for decades and is one of the most popular brands of hot sauce in the world.
