A heatwave is a great opportunity to give ice cream making a whirl. And even if you're already a pro, there's sure to be a couple of flavours you haven't yet tried in the list below.

1. Pomegranate Molasses Ice Cream
There's probably a bottle of pomegranate molasses in the back of your store-cupboard if you've ever cooked from Ottolenghi, Sabrina Ghayour or Claudia Roden. And pomegranate ice cream is one of our favourites. Just add a tablespoon or two to your favourite ice cream custard recipe. The unexpected sweet-sour flavours have the exciting tang of fizzy cola bottles, though are far more refined! Pomegranate molasses balances beautifully with cool creamy ice cream.

2. Dark Chocolate Ice Cream In A Nibbed Chocolate Shell
Think indulgent mini-Magnum ice creams in the guise of Ferrero Rocher. They take a little time to make, but a tray in your freezer will be a joyous treat.

3. Pistachio Ice Cream
Pistachio ice cream is a favourite at Italian Gelatarias. But if you haven't tasted pistachio ice cream made with real pistachios, you're in for a something special. 4. Matcha Green Tea Ice Cream
Ice cream isn't really served as a dessert in Japan or Korea yet ice cream parlours do a roaring trade during the day, helping customers cool down in summer. Continuing in the Japanese theme, black sesame ice cream is a surprising rich grey colour with a delectable nutty intensity. Served with a black sesame brittle it makes a fantastic after dinner treat. Just finely grind sesame seeds and a little salt before adding to your ice cream base.

6. Yuzu Sorbet
The yuzu is the seville orange of the Far East. Only available in Winter, the fruit is mostly pith and pips, the taste sharp – and yet incredibly aromatic. We love it in summer as a refreshing palate cleanser between courses or a light dessert.
7. Tonka Bean Ice Cream
Tropical coconut and vanilla, rich almond warmth, and a hint of sour cherry — you'd be forgiven for thinking this tonka bean ice cream recipe has many different ingredients. Yet the numerous flavours are all from a small grating of tonka bean.
