Sushi vinegar or sushi seasoning is a ready-blended mix of rice vinegar, sugar, and salt. Use a paddle to fold the vinegar into still-warm, cooked sushi rice. This gives the rice a distinctive sweet-sour taste, and sticky texture - perfect for rolling in nori seaweed sheets to make maki rolls, or topping with raw fish for nigiri sushi.

Directions for use: To make sushi rice, mix 5tbsp of sushi seasoning with 4 cups of hot cooked sushi rice (or 2 cups when uncooked). For the 'perfect' sushi rice, experts recommend mixing the rice with the sushi seasoning in a hangiri sushi barrel, which is wooden to absorb excess moisture.
