Kimchi is a Korean condiment made with fermented vegetables. The vegetables - usually cabbage or radish - are flavoured with gochugaru (Korean chilli powder), garlic, onion and fish sauce. Shrimp paste gives it a salty, umami kick.

In Korea, kimchi is served as a side dish for most main meals. It’s a key ingredient in jjigae, a spicy stew with pork belly.

Add spicy cabbage kimchi to bibimbap (Korean rice bowls), cheese toasties and hot pots. A spoonful will add sour heat to burgers and hot dogs.
