Piquillo peppers stuffed with partridge are a fantastic light bite to serve with cava or Spanish red wine. The mild, sweet peppers are roasted, peeled and filled with a creamy béchamel sauce flavoured with partridge. Partridge has a delicate gamey flavour that is a great match for the succulent sweetness of the piquillo peppers.

Serve these stuffed peppers with other Spanish tapas dishes like pan con tomate, chorizo in red wine  and spicy patatas bravas. The peppers are served in a rich tomato sauce that is delicious mopped up with crusty bread. They are ready in minutes - perfect for impromptu dinner parties or when guests pop in unannounced.
