Mill & Mortar Organic Kampot Red Peppercorn, 50g

Description

Kampot red peppercorns have a bright, fruity flavour. They are grown in the Kampot region of Cambodia and their origins can be traced back to the 13th century. 

Kampot pepper is also called red matured pepper. The berries are allowed to mature on the stalk until they turn a deep orange-red colour. They are then harvested and sorted by hand.

You can use Kampot red peppercorns in the same way as black pepper. They add a warm, peppery heat to dry rubs, sauces and grilled meat. Grind them in a mortar to add to peppercorn sauce or cacio e pepe.

In Cambodia, red peppercorns are the key flavouring in lok lak (shaking beef). Thinly sliced beef is stir fried and served in a glossy sauce made with soy sauce, oyster sauce and garlic. Kampot pepper gives the sauce a little bite.

Kampot pepper is also used to make dipping sauces. Mix the crushed peppercorns with lime juice, fish sauce and spring onions. The tangy sauce is delicious with prawns and crab claws.

Store in an airtight container in a dark, dry place.
