Isomalt Sugar


Isomalt is an ‘inverted sugar’, meaning that it is sweet like sugar, but has a slower rate of crystallisation. This makes isomalt sugar a great ingredient for ice cream making. The colourless, odourless ingredient derived from beetroot has many other uses though – particularly in molecular gastronomy and confectionary.

Use it for savoury, dehydrated meringues, croquants and tuiles. Also use the powder for sculpting intricate cake decorations, and as the base for toffee-like hard sweets.
