Description

Add dried shiitake mushrooms to stir fries and noodle soups. They’re an essential ingredient in Japanese and Chinese cuisine. You will find them in slow-cooked stews and claypot rice dishes. 

The drying process draws out their natural umami. Before use, soak them in water until softened. The mushrooms should double in size. The soaking liquid can be used as stock.

Shiitake mushrooms add depth of flavour to plant-based dishes. They have a savoury, almost meaty taste. Add them to ramen broth and braised beef dishes for an instant umami boost.
