Amontillado sherry is amber in colour, full-bodied and semi-dry in finish. Amontillado sherry has aromas of hazelnut and butterscotch, with complementary nutty and oak flavours from the American oak barrels it’s aged in. Serve cool (but not chilled) alongside pates and hard cheeses such as Manchego. The Amontillado sherry also pairs well with chicken and mushroom dishes, or as an aperitif with olives and mixed nuts.
The Bodegas Dios Baco in Jerez has been a winery since 1765. Current owners José Páez Morilla and daughter Alejandra now handcraft small batches of sherry there, all with the Jerez-Xérès-Sherry Designation of Origin. Other fabulous sherries from the Bodegas Dios Baco include Manzanilla, Oloroso and Pedro Ximenez.
