The Oxford 1970 edition of Pedro Ximenez sherry has been matured for around 20 years. Pedro Ximenez sherry is dark mahogany, almost black in colour with an intense aroma of Christmas pudding. It is rich and sweet, with complex notes of chocolate, liquorice and burnt caramel. Serve Pedro Ximenez at room temperature with blue cheese, foie gras, or alongside rich desserts. The Bodegas Dios Baco in Jerez has been a winery since 1765.
