Dios Baco El Cocinero Sherry Vinegar, 750ml


El Cocinero sherry vinegar has a complex flavour, somewhere between sharp and sweet. It’s fantastic in salad dressings, marinades and glazes for grilled meat and fish. This cask-aged vinegar is made by Bodegas Dios Baco, a winery in the sherry region of Jerez in southern Spain. It is aged for a shorter time than their ‘Reserva’ vinegars, giving it a light, fragrant flavour.

In Spain, sherry vinegar is added to gazpacho, romesco sauce and light dressings for salads and roasted vegetables. It has a nutty sweetness and bright acidity that can lift the flavour of slow-cooked stews and rich sauces for roast beef and pork.

To make a simple glaze for meat or fish, put 100ml of sherry vinegar and 50ml of clear honey in a small pan. Simmer over a high heat until it has reduced by half and then brush over salmon or grilled chicken thighs.
