Pedro Ximenez vinegar brings sweet, mellow, rounded flavours whilst the java long pepper adds a spicy, peppery kick with a strong hint of eucalyptus. A garnish of fresh mint leaves leaves a refreshing finish on the palate.
Strawberries are well known to have an affinity with balsamic vinegar but Spinola PX sherry vinegar really takes things to a new level - the vinegar comes from Southern Spain's 'Sherry Triangle' and is aged for 25 years in oak barrels, mellowing it and introducing complex oak wood notes. - Sprinkle the sugar over the strawberries and add the vinegar. Leave to macerate for at least 10 minutes - or even overnight.
