Terre Exotique’s Java long pepper is big, bold and spicy with strong aromas of cocoa and cinnamon - it’s excellent for meat ragus, sauces and even chocolate desserts. Cultivated in Indonesia, the long, elongated peppers were widely used in European cooking before chilli peppers rose to prominence.
Infuse these long peppers in tomato sauces and rich beef ragus for a kick of spice, or add to curries and tagines for a bold flavour. Java long pepper isn’t delicate, however the flavour can be mellowed by dry toasting in a pan before grinding, or adding to slow-cooked stews.
Because of its chocolate scent, Java long pepper is a popular choice for desserts, in particular ‘long pepper cream’, an infusion of pepper, cream and sugar.
Java long pepper needs to be ground with a pestle and mortar before putting in a pepper mill.
