An excellent starter for any BBQ party , Lamb Ribs are meaty, succulent, bursting with flavour and best eaten with your hands.
This recipe calls for your BBQ to be set up in a couple of ways. Firstly we want to add some smoke to the ribs, running the barbecue at 110°C, so water pan in place. To finish off we'll be grilling directly over the fire to make sure the fat renders.

Ingredients Serves: 4
- Lamb ribs 3/person (starter)
- Olive oil
- BBQ rub
- Apple wood chips

Method
- Firstly we want to add some smoke to the ribs, running the barbecue at 110°C, so water pan in place.
- Score the skin well, then coat the ribs with olive oil.
- Apply your favourite rub - salty, herby ones work well.
- Place the ribs on the smoker, add some apple wood for flavour and cook for around 45 minutes at 110°C.
- Set up your BBQ for direct grilling (by removing the water pan) until golden and soft. Tip: Use a toothpick to probe the meat for tenderness, you'll know they are done when the toothpick slides effortlessly into the meat .
- Remove the ribs and rest for around 15 minutes before serving.
