Taiwanese mochi with peanut cream make for a nutty morning snack or post-dinner nibble. Mochi traditionally have a red bean paste filling, however, these rice balls swap red beans for peanuts. The result is a sweet, nutty mix of flavours.

Mochi have a pillowy-soft, chewy texture that’s almost a cross between marshmallow and bubblegum. These rice cake sweets are especially popular in Taiwan and Japan. The process of making mochi from scratch involves multiple steps, from making a red bean paste to preparing the dough and moulding into the round shape.
