Somen thin wheat noodles are commonly eaten cold. They cook extremely quickly and have a light texture. Serve them chilled with a selection of fresh toppings - spring onion, tomato, ginger and sliced omelette. Or stir them into a miso soup.

Shimabara Tenobe Somen is a cooperative of noodle makers in Shimabara. The region is renowned throughout Japan for its somen noodles. It has been producing these distinctive thin wheat noodles since the early 17th century.
