Shaoxing cooking wine is an essential ingredient in Chinese cuisine. It’s part of a group of sweet rice wines known as ‘yellow’ wines, or huang jiu.
Shaoxing wine is made from three ingredients: water, rice and wheat. It has a sweet, heady flavour with a sharp, dry finish. In China, it’s used in braised dishes like Chairman Mao’s red-braised pork.

Shaoxing wine is also used in marinades. Toss chicken or beef with a spoonful of cooking wine and a little cornflour. Leave to sit for 15 minutes to one hour. The process tenderises the meat and stops it from drying out.
