Santorini tomato purée double concentrate is a rich, deep tomato sauce – use it to make Greek-style meatballs, stews and moussaka. ‘Tomataski’ is the name given to the tomato variety which grows on the volcanic soils of Santorini. The result is a small fruit with intense aromas and flavours, and a smooth texture. These tomatoes are then blitzed into a paste to produce this purée.
This classic Greek tomato paste makes a wonderful base for kokkinisto – a rich beef stew, or use it when making slow-cooked ragù and simple pasta sauces.
The phrase double concentrate means that this purée has twice the flavour than its purée alternatives. You only need to use a little purée to give your dishes an intense tomato flavour.
