La Brújula sardinillas, or small sardines, are your shortcut to easy gourmet meals. The plump, mild sardines are hand prepared, gently steamed, then canned by hand with olive oil.
Place sardines on slices of toasted sourdough. Top with a ‘salsa’ of fried garlic and chilli with lemon zest, finely chopped black olives, lots of fresh parsley and olive oil to make a vibrant Spanish starter or light lunch. For a quick and nutritious supper, fry off some diced onion in olive oil, then add halved cherry tomatoes, garlic and capers. Gently break up some sardines into the pan and heat through before stirring through your favourite pasta.
La Brújula sardines are fished in the plankton rich waters off the coast of Galicia in northwest Spain. As soon as the caught sardines make it to land they’re prepared for canning.
