Grains of Paradise is an African pepper - also known as melegueta pepper - which contains similar essential oils to allspice and cloves. It has extraordinary coconut aromas, with coconut-cardamom notes and a distinctive, blossomy sweetness. A really complex pepper, which peaked in popularity during the Middle Ages, and is making a tentative comeback in kitchens around Europe.
Visually and texturally this spice is different to the other peppers. It doesn’t grind as easily, meaning that a bit of elbow grease is involved – and even then, it’s still coarser. The grains of paradise are also a white-lilac-grey colour, different to the other peppers’ uniform brown colours. This is a great option when you’re worried that heavy black pepper flavours might overwhelm. Grains of paradise make a really interesting crust for tuna steaks. It’s great in dry meat rubs, stews, tagines, and even flavouring homemade gins.
