Calasparra paella rice is an absorbent small-grain rice used in paellas. The Calasparra paella rice takes its name from the Calasparra region where it’s grown, in South East Murcia - which has been awarded a DOP (Protected Denomination of Origin) thanks to its unique rice-growing conditions.
Mountainous Calasparra is the only Spanish region where rice is grown above sea level. This cooler climate means that the rice takes 30% longer to ripen, giving Calasparra paella rice time to develop the flavour which has earned Calasparra the reputation as one of the best paella rices in the world.
