Use this fragrant, spicy paste to make a classic Thai massaman curry, with its fragrant spiced sauce of lemongrass and galangal. The massaman curry has extra richness and warmth from cumin, coriander seeds, cinnamon, cardamom and nutmeg. It can be served with chicken, lamb, beef or veg and often includes peanuts or cashews.

How to make Thai massaman curry

Start by frying 50g of the paste with oil, then pour in a cup of coconut milk to form the base of your sauce. Add your meat, along with more coconut milk then bring to the boil. Add cubed potatoes, sliced onion and peanuts and cook until the veg is soft.
