The shape and size of the blade with its tapered tip makes it suited to a ‘rolling’ action: the speedy French method of chopping where the tip of the knife remains on the board. The elegant black handle is curved for comfort. The 18cm blade is made from molybdenum Japanese steel, with a Rockwell scale of Härte HRC 55.
