The De Buyer ‘Le Tube’ pastry syringe is the easiest way to get equal-sized cupcakes, profiteroles or macarons. You can even use it with whipped cream, mousse and buttercream.
The pastry syringe lets you set precisely how much batter, pastry mixture or frosting you want to dispense with each squeeze of the handle. Fill a cupcake tray with exactly the same amount of batter in each hollow, or ‘pipe’ identical amounts of macaron mixture onto a baking sheet.
The De Buyer pastry syringe has an easy lock/unlock feature at either end, so you can quickly fill and clean ‘Le Tube’ or change the nozzles. The main body of the syringe is marked with a scale in both ounces and millilitres so you can easily see how much you’re using. A dial at the base of the handle adjusts how much is dispensed with each squeeze of the handle – choose from 10-50ml in 10ml increments.
‘Le Tube’ comes with two nozzles – a plain round tip 8mm in diameter, and a 11mm diameter star tip with 8 points. They are made from BPA-free Tritan – a highly durable plastic that’s even dishwasher safe.
It also comes with 13 stainless steel decorating discs, for piping biscuit batter into a variety of uniform shapes including whirls, jam-filled rings and wreath shapes.
The set includes 2 caps for closing the tube, while it is stored away.
A set of 6 blue assorted piping nozzles is also available, so you can use ‘Le Tube’ for even more applications.
To clean the pastry syringe, dismantle all parts. Clean using non-abrasive products, or pop in the dishwasher. The syringe is 38cm long with a maximum capacity of 750ml.
Dishwasher safe. Do not use with stiff bread, biscuit or cookie doughs, as they may damage the mechanism.
