Zha cai is a type of pickled mustard tuber from China. The preserved vegetable has a spicy, tangy flavour. In China, it’s served as a condiment for rice and congee. 

Zha cai is particularly popular in Sichuan cooking. You can add it to soups or serve it on top of steamed rice. A small amount adds fiery acidity to stir fries and noodle dishes.
