This is our take on the classic affogato: hot matcha poured over cold vanilla ice cream. It’s a simple combination that just works: quick and quietly brilliant. It makes the perfect summer dessert when you want to impress without lifting a finger. Choose the best ice cream you can find; it makes all the difference.
Ingredients for Matcha-Gato Serves: 4
- 4 teaspoons matcha
- 400ml warm water (40ºC/104ºF)
- 1 teaspoon honey or maple syrup (optional)
- 4 scoops of high-quality vanilla ice cream
How to make Matcha-Gato
- Sift the matcha into a bowl. Add the warm water and honey or maple syrup, if using, then whisk until smooth and frothy.

Scoop the ice cream into four bowls or glasses. Pour the matcha over each scoop and serve immediately.
