Description

Tamarind sauce, with its distinctive sour taste, is a popular condiment in Indian homes and restaurants. It is made from tamarind (sometimes called the Indian date) , the fruit of the graceful, evergreen tamarind tree which is used in assorted forms to add a pleasantly sour tang to dishes in both Indian and South East Asian cuisines.

This tangy tamarind sauce, flavoured with cumin, is a handy accompaniment to a variety of dishes, adding a pleasant touch of salty-sweetness. Try using tamarind sauce as a dipping sauce with freshly-fried vegetable pakoras, made with aubergine, courgette or onion, more-ish meat or vegetable samosas or grilled meat or poultry.
