Description

Spanish saffron powder is a highly-prized spice used in sweet and savoury dishes from around the world. It is made from the dried red stigmas of purple crocus flowers which are then ground to a fine powder. Often called ‘red gold’, saffron is the world’s most expensive spice! This is because of the labour-intensive harvesting process which has to be done by hand.

While saffron threads are usually soaked in water before being added to dishes, this saffron powder is ready to use at a moment’s notice. A small pinch will give your dish a unique flavour and a warm, golden hue. The aroma is floral and honeyed, while the flavour is often described as grassy, earthy and slightly sweet. Use it sparingly - too much can make your dish taste bitter.

Saffron is an essential ingredient in Spanish paella, French bouillabaisse and Persian rice dishes. In Italy, it’s added to pasta dough and used to make a silky, golden risotto. You can use it to make a fragrant Indian biryani, a Middle Eastern tagine or a vibrant yellow aioli. It’s also used in baking and desserts - try adding a pinch to cakes, custard and rice pudding.
