Croxetti, also known as corzetti, is a flat, round pasta shaped from Liguria in Northwest Italy. It dates back to the middle ages and was traditionally made by pressing the dough under a coin or glass. Rarely seen outside of Ligurian trattorias, it’s a delicious and unique addition to your storecupboard.

Toss cooked croxetti with fresh basil pesto or a classic Genovese ‘salsa di noci’, made with walnuts, garlic and Parmesan. This delicate, coin-shaped pasta might be overwhelmed by a rich meat ragu but will steal the show in a simple lemon butter sauce or a light cream sauce flavoured with porcini mushrooms.
