Description

Bucatini is a long, thin dried pasta that is similar to spaghetti but with a hole through the middle. It is particularly popular in the Lazio region of Italy, where it is served with tomato sauces like amatriciana (flavoured with fried guanciale).

To make a classic Roman cacio e pepe, toss the slender pasta strands with finely grated Pecorino cheese and black pepper. A splash of the pasta water will transform the simple ingredients into a creamy, indulgent sauce.
